Why Honey Varieties Matter

But the proportions of those components vary enormously depending on the nectar source. The same 350 grams of honey can be:

4. Bee subspecies

Spring Honey (April — Early June)
Spring is when colonies build up rapidly after winter, and when the first major flows begin. Spring honeys are characterized by light colors, delicate aromas, and fast crystallization in some cases.
1. Acacia Honey (Акациев мед)
Source plant: Black locust tree (Robinia pseudoacacia), a tree originally from North America but widely naturalized across Europe. Bulgaria has some of the largest Robinia forests in the EU.
Harvest window: Late May to mid-June. The flow is short and intense — typically 2 to 3 weeks — and weather-dependent. A late frost can wipe it out.
Color: Almost water-clear when fresh, with a faint straw-yellow tint. The lightest honey commonly available.
Aroma and flavor: Very mild, delicate, floral. Some describe it as almost vanilla-like. Light on the palate, with a clean finish. Doesn't overpower other foods.
Crystallization: Extremely slow — often stays liquid for 1–2 years or more. This is because acacia honey is unusually high in fructose (~42%) and low in glucose (~27%), and fructose-rich solutions resist crystallization.
Health properties: Lower glycemic index than most honeys, so it's gentler on blood sugar. Mild antibacterial properties from hydrogen peroxide activity. Often recommended for children and the elderly because of its mildness.

2. Rapeseed Honey (Рапичен мед)

Color: Very pale, almost white to pale cream. The lightest honey after acacia.

7. Sunflower Honey (Слънчогледов мед)

Harvest window: Late July to late August, depending on sowing date and climate. The dominant summer flow in Bulgaria, Romania, Ukraine, southern Russia, and parts of Hungary.

12. Heather Honey (Пиренов мед)
Source plant: Common heather (Calluna vulgaris), the purple-flowered shrub that covers vast areas of moorland in Scotland, Ireland, Scandinavia, and mountainous regions of central and southeastern Europe.
Harvest window: Late August to late September. Short, intense flow.
Color: Dark amber to reddish-brown. Distinctive and unmistakable.
Aroma and flavor: Strong, complex, slightly bitter-tangy with a persistent finish. Some describe notes of caramel, dried fruit, and a slight "peaty" quality reminiscent of Scotch whisky.
Crystallization: Thixotropic — this is heather honey's unique property. It forms a gel that becomes liquid when stirred or shaken, and sets again at rest. This makes it exceptionally difficult to extract — many beekeepers press the combs rather than using a centrifugal extractor.

13. Forest Honeydew Honey (Манов мед)
Source: This is honey made not from flower nectar but from the sweet excretions of sap-sucking insects (aphids, scale insects, psyllids) that live on trees — especially oak, fir, spruce, beech, and pine. The bees collect these "honeydew" droplets and process them into honey. This is a uniquely European category, especially prominent in Bulgaria, Germany, Slovenia, Turkey, and the mountainous forests of southeastern Europe.

How to Identify Honey Types at Home
You don't need a laboratory to develop a working ability to identify honey varieties. With practice, you can tell most types apart using these tools:

Color
Hold the jar against a white background in natural daylight. The color spectrum of European honeys runs from water-clear (acacia) through pale straw (rapeseed), golden (sunflower, linden, polyfloral), amber (thyme, lavender), dark amber (heather, buckwheat), to nearly black (forest honeydew). This single test rules out many possibilities.
Aroma
Open the jar and inhale. Acacia smells faintly floral. Linden smells distinctly minty. Sunflower smells fresh and "green". Heather smells complex and slightly bitter. Forest honeydew smells malty and resinous. Your nose will pick up the signature of the source plant.
Flavor
A small taste tells you what your nose started. Pay attention to the finish — does the flavor linger or fade quickly? Does it have a bitter edge (chestnut, buckwheat, heather, thyme) or a clean finish (acacia, linden)?
Crystallization
All honey eventually crystallizes except — practically speaking — acacia. The texture and speed tells you a lot. Fast and coarse (rapeseed, sunflower) vs slow and fine (acacia, forest honeydew). Heather doesn't really crystallize — it goes thixotropic (jelly-like).
The thumb test
Place a drop on your thumb. Pure honey stays as a compact drop; adulterated honey spreads and runs quickly. This is a rough test but works as a quick screen.
The water test
Drop a spoonful into a glass of cold water. Pure honey sinks and forms a clump that doesn't dissolve quickly. Adulterated honey (mixed with sugar syrup) dissolves quickly and clouds the water.
The grain test
Place a small amount on a piece of white bread. Pure honey doesn't soak into the bread quickly. Adulterated honey soaks in within seconds, leaving a wet spot.
Microscopy / Melissopalynology
The definitive test is pollen analysis under a microscope. Every honey contains pollen from its source plants, and the pollen profile is unique to the botanical origin. This is how official certification (PDO, Protected Designation of Origin) is verified. Most home beekeepers don't have access to this equipment, but commercial labs do.
Health Benefits Across Honey Varieties
All raw, unheated honey has documented health benefits. The main active components are:

Storing Different Honey Varieties
Honey is remarkably shelf-stable — properly stored honey can last decades without spoiling. But each variety has its quirks:
Crystallization management
If your honey crystallizes and you prefer it liquid, place the jar in warm water (max 40°C / 104°F) for 30 minutes. Never microwave — heat destroys the beneficial enzymes. Higher temperatures (above 45°C) cause the honey to darken and lose some nutritional value permanently.
Container choice
